Canceling a new car deal with a dealer?

I just bought a car (signed the papers, but the check hasn't been cashed yet) that I haven't taken delivery of yet. I want to cancel the deal, but the dealer says "no!" What can I do?

What happens to the previous model year left over new cars once the new cars come out?

I have a car question - what happens to new cars not sold? Example: On January 1st 2004, what happens to all the unsold 2003's? Do they become used cars? I imagine if they're for sale - they're cheaper...
